Booza Delight owner Yasser Hashwi and his wife and business partner May developed Booza for the Michigan market. Yasser traveled to the middle east to learn the specific art of creating Booza. Mastering it wasn’t easy, but his diligence and sheer determination to keep the legacy of the dessert intact made him take every precaution with the preparation to ensure the old-world flavor stayed exact.
Booza (Arabic: بوظة) is a kind of Arabic ice cream known for its elastic texture and resistance to melting. It’s one of the oldest forms of ice cream and is most commonly found in Syria and the Middle East. The ice cream is usually and traditionally made with an ingredient called sahlab (سَحْلَب) or salep, which provides it with the ability to stretch and resist melting. Salep is also a primary ingredient in the Turkish version of this style of ice cream called dondurma and the Greek ice cream kaimaki.

Ashta is a rich and decadent thick clotted cream that's very well-known and loved all across the Middle East. Traditionally, it's made by boiling fresh milk and skimming off the thin skin that forms on its surface. The process is then repeated until a good amount is collected.
Salep is made from ground orchid roots.
Mastic is a resin extracted from trees. It’s a prominent ingredient in chewing gum and gives the ice cream a refreshing flavor similar to pine and cedar.
